This vegan dessert is a fancy version of the traditional PB and J pairing. The famous peanut butter and jam combo also works well with chocolate hence the brownies.

The first layer is a vegan brownie. On top of it is an easy jam recipe made in the microwave. The final layer is a peanut mousse made with peanut butter.

I find the balance of flavour in this vegan dessert to be on point. Or maybe I’m just making excuses for eating three quarters of it on my own.

Vegan Dessert: Peanut mousse, jam and brownies

Brownies Ingredients and Instructions

  • 1/2 cup flour
  • 2 tbsp cocoa powder
  • 1/2 sugar
  • 1/2 cup milk (I used coconut)
  • 4 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup melted chocolate 

Mix together and bake at 180ºC for 20 minutes or until you’re satisfied with the texture. 

Ovens are all so different from one another. Baking time will never be exactly the same for two people. So keep an eye on it in the last stages to make sure you end up with the right result.

Vegan Dessert: Peanut mousse, jam and brownies

Jam Ingredients and Instructions

  • 1/2 cup frozen berries
  • 1/4 cup sugar
  • 1 tbsp chia seeds

Mix the berries and sugar in a bowl and heat up in a microwave for 2-3 minutes, stir in between if necessary. Add chia seeds, it’ll thicken the jam as it cools down.

Or use an industrial jam, which is sweeter. You might need to make adjustment in sugar quantities in the brownies and peanut mousse to balance it out.

Peanut Mousse Ingredients and Instructions

  • 1/4 cup aquafaba (chickpea water)
  • 1/4 cup sugar
  • 1/3 cup peanut butter
  • 1/2 cup coconut cream (the white thick top part of a coconut milk can)

Whip the aquafaba, add the sugar when foam starts to form and bubbles get small. Continue until the texture holds its shape (it took me 9 minutes of electric whipping). Mix the peanut butter and coconut cream, fold the whipped aquafaba gently into it.

Assemble your Vegan Dessert

Assemble the brownies, jam and peanut mousse when the first two cooled down. Reserve in the fridge over night, and put in the freezer 30 minutes before serving to help take out of the tin.
