Try those vegan banana muffins, they are full of good things and super simple to make. They’re a fun snack to have on hand!

Add them to your breakfast or sweet treats vegan repertoire and enjoy.

This recipe is enough for 6-7 muffins and takes 15-20 minutes to make (including baking time).

Ingredients

  • 2 Bananas
  • 1 tablespoon Coconut oil
  • 2 tablespoons Peanut butter (or any nut butter, if you’re allergic you can add more coconut oil instead)
  • 1 teaspoon vanilla extract
  • 2 tablespoons Maple syrup (or sweetener of your choice)
  • 1 cup Oats
  • 1 tablespoons Chia seeds (or ground flax seeds)
  • 2 tablespoons Dry fruits (raisins, sultanas, chopped dried figs, etc.)
  • 2 tablespoons Cacao nibs
  • Chocolate for toppings

Instructions

First, take a large bowl or deep plate and mash you bananas with the back of a fork.

Then, add all your wet ingredients: melted coconut oil, nut butter, vanilla extract, sweetener.

Mix everything together and then add the dry ingredients: oats, chia seeds, dry fruits, cacao nibs. It should end up being a thick batter.

Next, split your vegan banana muffins batter into 6-7 muffin cases and top them with some pieces of chocolate. You can also use chocolate chips as they’re much more convenient.

Then, put your muffins in the oven and bake them at 180°C (or 375°F) for 10 minutes.

You can leave them in the oven but I would advise against overtaking them so they don’t end up dry.

Finally, let your muffins cool down before eating them, they’ll come out easier of their cases if they got a little time to cool down.
